Merlot Wine Kit: The Smooth, Easy-Drinking Red Everyone Loves

If you want a red that almost everyone will enjoy, make Merlot. The Crafted Series Merlot 11.5% Medium-Bodied Red Winemaking Kit makes a smooth, approachable red and is one of our most popular kits.

What it tastes like

This Merlot is medium-bodied with balanced acidity and present but moderate tannin. It's softer and rounder than a Cabernet, which makes it easy to drink on its own or with dinner.

Kit at a glance

  • Finished wine: 23 L (about 6 US gallons), about 30 bottles of 750 ml
  • Alcohol: 11.5% ABV
  • Winemaking time: about 4 weeks
  • Juice/concentrate pack: 5.3 L
  • Origin: Canada

What's in the box

Wine base, yeast, bentonite, sulphite/sorbate and fining agents. Basic winemaking equipment is sold separately.

Merlot or Cabernet?

Both are classic reds, but they're different wines. Merlot is smoother, with softer tannin, and it's great for everyday drinking and for people new to red wine. Cabernet Sauvignon is firmer and bolder, with high tannin. Many winemakers keep both on hand: one for weeknights, one for steak night.

Tips for a smooth Merlot

  • Clean and sanitize all equipment with B-Brite before you start.
  • Take hydrometer readings so you know when fermentation is really done.
  • Keep your carboy topped up to limit air contact while it clears.
  • Rest it in the bottle. A few extra weeks in the bottle rounds the flavours out even more.

Food pairings

Merlot works with pasta in tomato sauce, pizza, burgers, roast chicken, pork and mild cheeses.
