Cabernet Sauvignon is a red grape varietal known for its thick, durable skin, and the vine’s resistance to the elements. After the birth of the grape, the Cabernet Sauvignon varietal began to be adopted in parts of France by winemakers searching for more durable plants that were relatively easy to grow, and the grape found its champion in the region of Bordeaux.

Taste: Aromas and flavors of blackcurrant, black cherry and blackberry, as well as vegetal notes of green bell pepper and mint, together with vanilla and spice from oak. 


Tannin: High

Acidity: Medium to high

Age: Most are made to be consumed within a few years of release, but higher quality wines need several years to soften their tannic structure and develop their full flavour profile.

Excellent

My own grape yield was lower than expected this year (about 3 gallons due to the drought and withering heat), so I needed juice to make up the difference. This did the trick, bringing my yield to about 6-1/2 gallons, at 11.5% abv potential. The juice was fresh, no off color, odor or taste. I used EC1118 yeast, rather than the unknown yeast provided. It is happily fermenting as we speak!

Cab is the best, in my opinion, but my wife drinks three other varieties here

Easy to make. You just need a hydrometer ($15 item) if you add a few pounds of sugar to get the alcohol up to 11-12%, to add at beginning, add yeast,leave at about 73 degrees, rack at about 15 days, then bottle, (see directions for more details.) I bottle my cabs around 30-40 days, then wait 2 or 3 months to get the ultimate (not bad after 30 days,if thirsty) Cab wine with an abundance of flavors and aromas. Hats off to these wine concentrate developers of this Cab, and many more of whatever your favorite wine is to make it yourself, fun,like cooking, and enjoy an expensive bottle of wine for way less by making it yourself.
